why the graph of exponential functions cut the y-axis at (0,1) ?

This is because exponential functions are of the form \[a ^{x}\] where a is a number and x is the variable. Almost all numbers (excluding 0) raised to the 0 power equal 1. Therefor basic exponential functions pass through the point x = 0, y = 1.
