If capital expenditures aren't explicitly stated on a balance sheet, how can I calculate the value?

It should be indicated in the cash flow statement. Otherwise, all else being equal, you can compute the difference between the net (taking into account the depreciation) fixed assets of the last two periods to come up with an estimate of what was invested during the last period.
A good way is to take the increase in Gross Fixed assets on the balance sheet. Otherwise you could look in the notes to financial statements in the 10K (just open it in PDF format and use the search tool to look up Capital Expenditures).
