can trigonometric functions such as the sine, cosine , secant, cosecant be turned into a piecewise? Each time I type in a domain restriction to a cosine function, the piece I want gone is just shifted up a few units.

no, I have in my y1: cos(4x)-5 (x<-3 and x>3). The output on the graph was the cosine function that had a change in periods but not in vertical shift. If I just did one domain restriction such as x<-3, then all x values less than -3 have been affected with the vertical shift down 5 units, but all values greater than -3 are present but not affected. I want the values in between -3 and 3 gone.
