Concerning the expansion of the universe as space, how is it that space can expand if there is nothing to space? I can bend/expand/contract material, but how is it that space or nothing can be treated like it's something when it isn't?

Your assumption that space is nothing is flawed. Space is, in fact, something. As such, it can expand and contract.
