Im on ps5 no. 2. For this part i just simply used the following:

for letter in word:
hand[letter] -= 1

return hand

since it says not to change hand, is this cheating?

cheating??? only you could say, but definitely not following the instructions which is usually not a good idea or a good habit to form.
