for Ax=b when I chose b from A I always end up with an inconsistent system even when I use A=rand(3,3) or any other dimensions. why is this?

You mean you're setting up a random matrix A, then selecting a random vector b then finding the system to be inconsistent much of the time?

When i generate the random matrix A and chose the vector b from the columns of matrix A and solve for x I get an inconsistent system. Even when I set up a real matrix A and chose b from one of the columns of A and solve for x, I still get an inconsistent system
