Could be both, since the plural of yolk is yolk. Although, an average egg will only have one yolk, so one can assume that if there is a single egg, there is only one yolk, making the logical answer the second option.
is white would be better unless you were saying it plural then it would maybe be "The yolk of the eggs are white."

Depending on what you are doing...a really good one is to like go sit outside or somethin and try to describe everything around you, all the smells, the sights, the sounds, sensations. And it will come out surprisingly good! usually ^_^

@Harkirat: Have you seen an egg other than class A, some of those yolks are pretty funny colors. And the Albumen is clear.
