how does water kept in an earthen pot become cool during summer?

Earthen pot has a lot of small pores on it through which small quantity of water moves in by surface tension, which moves to the surface of the pot and evaporates, this process carries away heat to the surface and from there to circulating air which helps in keeping the water cool inside the earthen pot.

To an extent hakkunamatata is right but not completely... He is right about the part that the earthen pot has small pores through which water seeps and comes to the surface and evaporates. Any liquid needs some heat/energy to evaporate and this is called latent heat of evaporation. the water molecules on the surface of the pot take this required energy from the pot/water inside and so it loses heat and becomes colder than before....... The air around only helps in carrying away the water vapour surrounding the pot so that more evaporation takes place....
