a lot of that is because of proprietary considerrations and the methods used to protect them. some of it is software bloat.  quite often you can get a patch for those games if they are popular.

If you compile something the binary will be dependent on the platform. Also many games don't work for other OS than Windows because they use DirectX technology which is not available in other OS. Honestly developers should be using OpenGL instead.
