It depends on the fruit, I've heard lemons work best. When you put the electrodes into your fruit, the citric acid in the lemon acts as your battery acid. There is an electrochemical reaction, with one electrode undergoing a reduction reaction and the other an oxidation reaction. The two reactions create an electrochemical gradient allowing charge to flow from one electrode to the other.

You also need to have the right kinds of metal, typically copper and zinc I believe.

magnesium works better than zinc, its just a little more dangerous
