yes you can i believe if you take the case of the coin standing in between true.. maybe a thicker coin can do the job.

Its not possible to have 3 outcomes with equal probability with a coin. as the flat surfaces will have a better chances.. u can try something like triangular based prism with height much longer than area of the base..then on rolling it..it will land on one of the 3vertical faces of the prism with equal chances...
