The Ohm's law -curve is just a straight slope going through origo. In your picture, the slope of the curve is dV/dI=R (the resistance). For nonlinear conductors, the curve is different. For example, for a diode it is an exponential curve with a steep rise near about 0.7-0.8 volts.
