4x^8-61x^4+225 ... the answer is (2x^2+5)(2x^2-5)(x^2+3)(x^2-3) but i know to know how to get there

If u set x^8 = y^2, your equation becomes 4y^2-61y+225 which factors as (4y-25)(y-9) then sub back in for x and u have 2 difference of squares.
