I am writing a family history and do not know how to capitalize Great great great grandfather XYZ. Also how would I write that without a proper name following the great?

I am not 100% sure, but I don't think you need to capitalise Great anywhere. It's a relation. You don't capitalise 'mother', nor 'grandmother'. You don't capitalise 'brother', nor 'half-brother'. You can just write "great great great great great grandfather". Of course, if your sentence starts with it, then you capitalise. :)
