Read the book, take out all the important aspects of the story throw out the filler and write. Or find a cliff notes version. ;) Otherwise you just need to summarize the story, shorten it to your liking and still tell the story.

And to earn some brownie points from the teacher make sure you pull out the theme or lesson that the story teaches and apply it to your life.

Summarize, starting at the begining. Use words like "first, next, then, and lastly," to give your readers a timeline of the book.
