Conservation of energy is an empirical fact, one of the postulates of thermodynamics. It cannot be proven, it can only be observed. What you may have been asked to do is show that the equations for the motion of a pendulum are consistent with CoE. To do that, calculate the potential and kinetic energy of the pendulum in three positions, e.g. at the top of the swing (when the kinetic energy is zero), at the bottom (when potential energy is zero), and halfway in-between. Show that the sum, kinetic + potential, is always a constant.
