The process of converting, or digitizing, the almost infinitely variable amplitude of an analog waveform to one of a finite series of discrete levels. In video compression, quantization is a process that attempts to determine what information can be discarded safely without a significant loss in visual fidelity. If you're talking about "quantization" with respect to Quantum Mechanics it is when you take a classical variable which is usually continuous and convert it to a discrete "quantum" quantity. For example in classical physics the energy of a system can take a continuous range of values but when considering a system from a quantum perspective the energy will usually take a discrete set of values (e.g. the energy levels of atoms and molecules) which is more consistent with experiment (i.e. spectroscopy).
