insulin synthesis is very interesting. involves e. coli cells and i guess nobody else will choose it. it's easy, too.

Probably the most interesting, to me at least, is very similar to what Schliefspur suggested...
using synthetic biology, e. coli have been made that excrete antimalarial drug compounds. This is similar to the insulin synthesis, except it's newer and one of the only current successful synthetic biological applications.

"one of the only current successful synthetic biological applications"? i hope you are kidding by that! there are tons of synthetic biological applications, and growth hormone and insulin are just two of them. don't underestimate recombinant protein synthesis, my friend!
