What is fermentation used for? Making alcohol and bread. Why? Because the fermentation of sugars produces CO2 and alcohol. I'm not sure how in depth you're looking for in your answer, but basically fermentation cleaves the carbon/carbon bonds to do this.

Yeah, carbon is split and binds with oxygen, creating CO2.
