Water would be lacking since water in the plants is transported by the xylem.

the phloem tubes contain a 1 mol/l solution of mainly sugar oder sugar alcoholes. besides that, amino acids and hormones are also transported. since water is the carrier of it all, I would suppose that the aphids would lack fat in their diet. remember: 1 mol/l glucose is 180g / liter. In classic Coca Cola there are about 625g sugar / liter. So it ain't water, if I am not mistaken.
