Normally it's the force exerted by gravity on something. And why it's used to solve a particular equation depends entirely on what's being calculated. Generally Fg = mg which is the mass of the object in question times the acceleration due to gravity, which is about 9.81m/s^2, if you're talking about something close to Earth's surface.
