The softest part is most likely the brain. It is the part that is most changeable due to external influences, and so, it is the "softest".

I disagree with heena, my personal experience with the brain says that they are very strong and rigid structures. On the other hand, tissues seem to tear and cut off faster than the brain, which is also able to elongate a bit, which the tissues cannot.

and oh SREV98 ... ligaments and tendons are the hardest things to tear off man; ever tried to bite the ligament off a chicken's leg? It takes a lot of time even after boiling!
