The MIT course is a great start-- http://ocw.mit.edu/courses/foreign-languages-and-literatures/21f-101-chinese-i-regular-spring-2006/ It even comes with a textbook and audio examples. You could set up a study plan to cover a certain number of sessions per week (see "readings").
