If it goes with 60 revolutions per minute, it means it moves 1 revolution per second. With one revolution per second, the speed of a stray piece will be $$2\pi r = 2\pi0.10m \approx 0.6m/s$$

The direction of the pepperoni will be along the tangent of its movement at the point in which it flies off.
