when real-world populations of plants and animals are analyzed, why do they most often have the logistic growth curve?

Because for it to be exponential growth the animals and plants would have to have no predators and there is exponential space, which is highly unlikely. At the beginning of every population growth though there is exponential and once it reaches carrying capacity it then turns to logistic growth.
