If it is a letter, which is more informal than most other forms of writing, you could just say, According to Francois Marie Lappe in Diet for a Small planet, eating beef is really... If it is more formal you can use superscript and footnotes.

MLA style is standard, however, as Preetha states, you can also informally state it. It depends on what kind of a letter this is - is it academic? If so, your teacher would most liek the MLA style. Purdue Owl is great on citations: http://owl.english.purdue.edu/owl/resource/747/01/
