I was thinking that aswell but high cholesterol is a thick substance that attaches itself to the blood vessel, blocking the passage of blood from the heart

Wait a second. You _can_ control cholesterol by changing diet and by using certain drugs (statins). That isn't to say you can completely control it, but we do have some degree of control. What you can't control are hereditary factors.
