I am trying to create my resume and I have 3 different colleges I have attended (no degree yet) I am taking a break from college... how do I indicate this in my resume? I don't want to say "degree in progress" since I am not taking courses currently.

What people will want to know is why you went to three colleges
List them sequentially.
College A 2009  - Current
Degree Expected in 2012.  Taking courses in Bio and Physics.  
College B 2008-2009
COmpleted courses in science and math, transferred to CollegeA
College C 2007-2009 
Joined as Business major, transferred to College B

what if I took a break between 2 of them? I went to IU for a year then transferred to IUPUI for a semester. I then took about a 2 1/2 year break. Then started at Ivy Tech in 2009 and now I'm taking another break.

That is fine.  There are many reasons.  My point is you should be prepared to address them.If you are still as student at Ivytech, you can say Current.
