First of all, you must be able to accurately interpret the prompt and understand the essay "assignment."  Since you have limited time and space to write, you should plan your essay (such as using a 5-paragraph outline and format) with stating your thesis (your position on the topic), providing supporting examples and observations, and concluding with reinforcement of your position.  Practice with looking at sample SAT essay prompts and writing under the time constraints.  Hope this helps.
