The application is asking for lots of private information, so I guess it will not be in our profile after anybody is made ambassador ?

And what are the extra privileges that an ambassador get as compared to a normal user?

Only a few of the admins see the application, so don't worry, FFM. None of it will go on your profile, and nothing on those applications (other than your username) will be made public without your permission. Ambassadors will be given a badge on their profile.
