It can be used for dyes. The Phoenecians especially loved the dye purple because it was a sign of wealth.

i think it's about maximization of the photosynthesis efficiency. anthocyanin which causes the purple colour reflects the passing light back to the parts where the chlorophyll is present. so, it makes the light, which plant couldn't absorb, available again.

when we did an experiment for studying stomatal aperatus,we took these leaves as lower epidermal peel are the ones having comparably large amount of stomata(both in monocot & dicot) since they are already purple,they need not be stained additionally for viewing through a microscope
