Should I use sprintf + fwrite, or should I use fprintf ?

I would go with fprintf. Why use two calls when one will do?

In comparison ,fwrite is faster than all printf functions , i guess it depends on the requirement if you want the return value of sprintf then use former one or else i would go for later one.
