"Theory" is potentially a loaded word in the realm of literary criticism. There are many theories of literature -- different lenses through which critics and writers have understood, and analyzed, works of literature -- but there is also what is just termed "theory" or sometimes (to help distinguish it) "theory itself." Let me refer you to Chapter 1, "What Is Theory?," of _Literary Theory: A Very Short Introduction_.
