what is the process that occurs when large masses of igneous rock,particularly granite begin to break loose like layers of an onion

If I remember correctly it is termed exfoliation. This is where the rock expands and contracts (due to heat/cold), the outside layers expand at a different rate to those on the inside of the rock and so it breaks off in layers.
