Some proteins are present in the blood to help maintain the osmotic potential - that is, without them water would be lost to the tissues, resulting in oedema. The protein serum albumin is produced by the liver and this seems to be it's main function. Another blood protein is haemoglobin, which as you might know, transports oxygen. Myoglobin in the muscles is another oxygen carrier molecule. Minerals like iron are found in complexes with proteins known as transporters. Transferrin can bind two ferric iron ions and controls levels of available iron. Some proteins are important for control of infection - immunoglobulins bind foreign or infected cells, marking them for other proteins (called complement factors) to make pores in so the foreign cells burst. Some proteins break up other proteins in food, these are known as digestive enzymes. There are other proteins which make sure the body doesn't break itself down like anti-trypsin, which binds to the enzyme trypsin and stops it working. I think that's six - you might like to look them up for more information. There are far more proteins and far more specific uses that I have mentioned!
