Dicots have their vascular tissue in bundles that form a cylinder (or a ring, if just looking at a cross section) as opposed to monocots which have a more randomly distributed bundles of vascular tissue. This difference is important, because it's the main reason why most of the trees you see outside that aren't gymnosperms are woody dicots. The vascular system in monocots is too spread out to support a plant as large as a tree, while the dicot has a strong support to hold a tree upright!
