In terms just of language, it's an inversion. You know, rather than "I said, "How many are you then, . . . " And there may be another term for the way the question itself is phrased.

That fits. I guess I was thinking of something more particular. That's very basic to poetry.

No prob. Good for me to review this stuff as well. Poetry is not something I know a lot about. But stanza it is. And looks like it's grouped in this case by length and metrical form. Across that stanza to the next, rhyme also comes into play.
