First food is dissolved in HCl and then this acidulated food undergoes neutralization reaction with the bile from liver. Besides different enzymes act on food particles like carbohydrate,fat and proteins and hydrolyse them into simpler components. 
Protein=amino acids,Fat=fatty acids+glycerol,carbohydrate=disaccharides and monosaccharides

A chemial change because during digestion carbohydrates are converted into simple sugar units,proteins into amino acids and so on, water and enzymes present in the body catalysed these reactions.

I believe that was a celebrated theory back in the day.  But the egyptians had it being rolled by a dung beetle tho which truly is just absurd.
