Can yeast be used in Enzyme therapy for the disease Phenylketonuria (PKU)?

If by enzyme therapy you mean giving someone the proper enzyme to correct for the disease, then sure. Yeast are eukaryotes and therefore undergo eukaryotic transcription/translation (although in a slightly different means than humans), so this means they have the machinery and such to properly fold up an enzyme. Using bacteria would be either risky/not worth it since they don't have the machinery capable of properly folding the translated enzyme.
