Peeled potatoes get oxidized when exposed to air, but when put in water, they remain fresh.what is the mechanism behind them remaining fresh when submerged in water?

actually i am at a loss here. i can only guess i am out of my elemenyt. however - in the air u have 21% of molecular oxygen O2 - avaiable to redox reactions. O2 content in the water is much much lower, thus less oxygenation.
its simple!!!! potato oxidises when it reacts with the oxygen present in the atmosphere. but,when the potato is submerged in water it does not comes in contact with the oxygen. So it doesnt oxidises!
