What sort of tasks are more easily done under the GNU/Linux environment than on Windows?

Short answer: everything. Having regular expressions at your fingertips is a godsend when dealing with log files. Writing scripts to do complex commands as a simple command is a great luxury. Things ultimately work easier and more reliably when standards are adhered to. The stupidity that GUIs can hide is amazing!

GNU/Linux distros have GUIs nowadays. Video editing etc. is kinda hard over an ssh connection. The proprietary drivers for e. g. 3d accelerators (and devices in general) tend to have better support (by the hardware vendors) in Windows. Computer games tend to be few and far between (and not nearly as polished) on Linux. So my short answer: Most stuff that doesn't require a GUI, so in particular "server stuff". Going from Windows to Linux takes some getting used to (but the same is true the other way round), and commercial games may never take off on Linux because the sales model usually involves closed source.
