"Sarcasm" is a word often misused--do you mean sarcastic poetry or parodies? Ezra Pound wrote a parody of _Sumer is Icumen In_.

And there are other parodies of this poem.

In _Alice Through the Looking Glass_, the white knight makes a poem parody of Emerson's _Self Reliance_, called _A Sitting On a Gate, and there are other parody poems in the Alice series. You can tell I like comedy, huh? :)
