Here's how to figure out which to use.
Draw a picture and label everything you know.
Figure out which side is the hypotenuse, which side is adjacent to the angle you know, and which side is opposite from the angle you know.
Now, which side length do you know, and which side are you trying to figure out?
If it's opposite and hypotenuse, then you should use Sin.
If it's adjacent and hypotenuse, then you should use Cos.
If it's opposite and adjacent, then you should use Tan.
