I think your letter should focus on what the tests will require her to do and what will happen to her and why and not necessarily start with the biology she isn't interested in. For example, the fasting blood sugar test will require that she not eat for 12 or 24 hours, depending on the sensitivity threshold of the test, and then have a blood sample drawn. You could explain about how the body uses up the readily available glucose in the blood and then changes over to glycogen and lipid metabolism and the importance of interpreting the other tests in the context of that basal metabolic rate. That would give you a good in to talk about the other tests...
