The first part has a page long answer. Deals with the immune system and how it works. But I guess you know these. On the second part though, the answer is based on the fact that when you do not wash your hands, bacteria and fungus can grow on it, which, when eaten, might enter the blood system while in your mouth or esophagus (the pH in the stomach kills them, but they can enter your body before they enter your stomach, also, some are resistant (grow shells against acids)).
