Not sure why the answer isn't just evaporation and condensation and precipitation.  
By definition, transpiration, infiltration and runoff don't seem to be possible at all in a ziplog bag.

The process goes from evaporation -> condensation -> precipitation so if only one answer is needed, I'd say precipitation since the condensed droplets are falling in the bag.
