The art of cooking is truely the understanding of thermodynamics!

If the oven/pan is too cold, the food does not cook through, if it is too hot, it burns on the outside and is still raw in the middle (or overcooked and dry), if it is just right, the thermal penetration reaches right through enough to cook the product, but not enough to char the outside...perfect!
