I believe the matter would be solid since absolute zero = 0 Kelvin = -273 degrees Celsius

no, matter doesn't stop it just changes its state from what it was before. For example if your matter was originally a liquid or even a gas, if you brought it below absolute zero-- it'll freeze and become a solid.
