In a career, such as Veterinarian, what does targeting minority groups mean? Plz explain and be there to help if I am confused.

Not unless some vet schools admit minority groups with lower academic standards than they have for ordinary students. Or some employers are more willing to hire vets of minority groups than other, equally qualified applicants. This is really a subjective question, not one about science, which is why I can't give you a very good answer...

Overall, I would say no, this career does not target minority groups.
