Why is pH 7 is optimum for enzyme activity?

not all enzyme's optimal pH is 7. Different enzymes work best at different pH. Pepsin is released by chief cells in stomach and works best at pH 2. Remember that stomach release gastric acid? If pepsin optimum pH is 7, then it is pretty useless in stomach. Trypsin works in conditions slightly basic, which is around 8. I hope this helps.
